Good Greens for Bad Yogis: How to Fall in Love With Kale (RECIPE)

Contrary to what my bio may suggest, I don’t actually sustain myself solely on red meat and booze. My secret’s out: in addition to meat and cheese, I also eat salads and seasonal produce and organic herbs.

But unlike every yogi I’ve ever met, I’ve never been a fan of kale. I never “crave” it, I don’t like its smell, and to be honest, it tastes too much like lawnmower clippings for me to consider it real food (not that I can actually confirm what those taste like either, but you get my point).

Don’t even get me started on those crazy people who can actually juice this stuff and drink it...I could dry-heave just thinking about it.

But for whatever reason, I was feeling rebellious and decided to try my hand at making kale taste good this weekend and succeeded! From me to you, here’s a way to get in your greens without protest…

What You Need for Your New Kale Love Affair

  • 1 bunch of Lacinato kale (Curly works just as well but I prefer the texture of Lacinato)
  • 1 lemon
  • 4 tbsp extra virgin olive oil
  • 1 tsp raw honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper

How to Prepare It

After washing and drying your kale thoroughly, remove leaves from the ribs and chop roughly. Chop it as small as you want—mine was almost like parsley and was perfect. Set aside.

In a large bowl, combine olive oil, juice from one lemon, honey, salt, and pepper and whisk quickly to combine. Toss kale in dressing until completely coated and let sit in the fridge for about 30 minutes. This lightly “cooks” and softens the leaves and has an amazing flavor.
